Flowers have long been a favourite of still life artists, often as symbols of growth and new life, and conversely vanitas - death & the passage of time. They can also simply appear as beautiful pieces of the natural world. I was never that much of a traditionalist, but after setting a rose as a painting challenge for myself once (all those overlapping petails!), I was hooked.
